Captain’s Reserve is a 5-year-old bottled-in-bond expression of our boathouse-aged bourbon. As a special release, Captain’s Reserve will be limited to one or two single-barrel releases per year. Only available at our tasting room, this bourbon is aged atop the water longer than any whiskey in the world. Only our best straight bourbon barrels, with distinctive characteristics, are considered for Captain’s Reserve.

“Comforting aromas of fresh-brewed espresso, roasted pecans, warm arepas, chocolate-covered peanuts, Italian hot cocoa, mint chocolate, and hints of black cherry and grape. There’s a rich, tactile boldness on the palette, with flavors of cinnamon, peppermint, black pepper, cigar wrapper, barrel char, and lots of high-quality dark chocolate. The full finish has more dark chocolate, charred oak, spiced coffee bean, and hints of cigar.

“This is the oldest release yet from Chambers Bay – a 5-year-old Bottled in Bond Bourbon matured on Washington’s Puget Sound. Not on the “shores of Puget Sound,” but actually on the Sound in a floating boathouse converted into a rickhouse. The nose has notes of toasted caramel, vanilla, dark chocolate, honey, and a soft oakiness. The taste has a good balance of oak, honey, toasted caramel, and touches of peppercorns and allspice. The finish is medium-length with a good balance of honey, oak, and caramel.”
