This is Batch #3 of the straight Bourbon from Chambers Bay Distillery on the shore of Puget Sound near Tacoma, Washington. The nose is aromatic with notes of oak, pipe tobacco, a hint of allspice, honey, and vanilla. The taste starts off with anise and butterscotch balanced by cinnamon and allspice with honey, vanilla, and a subtle oakiness in the background. The finish is long with lingering cinnamon spiciness and a touch of honey in the background. (September, 2018)
